Spinach And Sweet Corn Mashed Potatoes

Ingredients:

  • 2-1/2 lb new potatoes , scrubbed and quartered
  • 1/2 tsp salt
  • 3/4 cup and 2 tsp butter, softened
  • 3/4 cup and 2 tsp heavy cream
  • salt and pepper to taste
  • 1 tbsp and 1-3/4 tsp olive oil
  • 2-1/3 cups and 1 tbsp whole kernel corn
  • 1-1/2 (10 oz) packages fresh spinach, stems removed
  • 2-1/2 tsp minced garlic

Directions:

  1. Place potatoes in a pot and cover with water.
  2. Bring to a boil and add 1/4 teaspoon salt.
  3. Boil until potatoes are tender about 15 minutes.
  4. Drain water and mash potatoes together with butter and heavy cream until light and fluffy.
  5. Season with salt and pepper to taste.
  6. Heat a large skillet over medium heat.
  7. Pour in olive oil and saute corn 2 to 3 minutes.
  8. Stir spinach and garlic into skillet and saute an additional 1 minute, until spinach is wilted.
  9. Fold mixture into mashed potatoes.
  10. Adjust seasonings and serve immediately.
