Spinach And Sweet Corn Mashed Potatoes

I was skeptical about this when I ran across it a few year ago, but tried it on co-workers and they loved it. Now a favorite in my household, hope you enjoy as much as we do. This is very easy to make and can easily be doubled or tripled for a larger group.
Ingredients:
2-1/2 pounds new potatoes, scrubbed and quartered
1/2 teaspoon salt
3/4 cup and 2 teaspoons butter, softened
3/4 cup and 2 teaspoons heavy cream
salt and pepper to taste
1 tablespoon and 1-3/4 teaspoons olive oil
2-1/3 cups and 1 tablespoon whole kernel corn
1-1/2 (10 ounce) packages fresh spinach, stems removed
2-1/2 teaspoons minced garlic
Directions:
1. Place potatoes in a pot and cover with water.
2. Bring to a boil and add 1/4 teaspoon salt.
3. Boil until potatoes are tender about 15 minutes.
4. Drain water and mash potatoes together with butter and heavy cream until light and fluffy.
5. Season with salt and pepper to taste.
6. Heat a large skillet over medium heat.
7. Pour in olive oil and saute corn 2 to 3 minutes.
8. Stir spinach and garlic into skillet and saute an additional 1 minute, until spinach is wilted.
9. Fold mixture into mashed potatoes.
10. Adjust seasonings and serve immediately.
