Spinach and Mackerel Salad

Ingredients:

  • 4 tbsp oil
  • 2 tbsp vinegar
  • 180 g spinach
  • 285 g mackerel

Directions:

  1. To make the dressing, whisk the oils with the vinegar in a bowl and season. Skin and stone the avocado and cut into thin slices or cubes. Toss gently in the dressing.
  2. Wash the spinach in a large bowl of cold water. Drain and dry in a salad spinner, or drain in a colander and pat dry with the kitchen paper.
  3. Toss the spinach with the tomatoes, cucumber, mackerel, avocado, and dressing, and serve immediately with freshly ground black pepper and extra dressing on the side.
