Ingredients:

Directions:

  1. Peel potatoes, cut into wedges shape slices. Soak in water for 5 mins.
  2. Rinse anchovies and strain.
  3. Cut onions into rings and chop green chilli.
  4. Blend onions with garlic.
  5. Heat about 2 cups of oil. Fry sliced potato until cooked.
  6. Remove all but 4-5 tbsp of the oil and fry anchovies until brown and crisp. Set aside.
  7. Remove anchovies and use remaining oil to fry onion and garlic until fragrant.
  8. Add chili paste stir again until cooked (about 10 mins) then add the onions and green chili.
  9. Stir until well mixed then add half a cup of water.
  10. Allow it to thicken.
  11. Add all the fried potato and achovies and mix well.
  12. Wait a little, then add a little salt and sugar.
  13. Cook for another 3-5 minutes until cooked.
  14. Serve with rice or bread.
