Spicy Meatball Noodle And Vegetable Soup

Ingredients:

Directions:

  1. Empty the 2 cans of beef broth in a medium saucepan.
  2. Add carrots,celery,onion and garlic bring to a boil then reduce heat and simmer for APPROX. 1 hour with a lid on.
  3. While the broth is working mix the meat mixture together and combine well then make as many meatballs the size of quarters or just a little bigger as you can.
  4. Cover a baking sheet with foil then space the meatballs evenly on the baking sheet.
  5. Bake them at 350 degrees for 30 to 45 minutes or until done.
  6. While the meatballs are baking put the soup mixture in a large stew pot add the seasoned beef broth and tomato juice and the meatballs as they are done. Then bring to a boil then reduce heat and simmer until all vegetables and noodles are soft. If your meatballs have charred pieces on them when they come out of the oven add those pieces to just more flavor LOL
