Ingredients:

Directions:

  1. Using the flat side of a meat mallet, crack each potato to break the skin.
  2. In a large shallow dutch oven, heat oil over medium low heat.
  3. Add potatoes basil, chili, coriander and thyme.
  4. Cover and cook, stirring frequently, for about 30 minutes, or until potatoes are tender and golden.
  5. Add dill and salt.
  6. Stir to combine before serving.
