Spicy Applesauce Bread

Ingredients:

  • 1 cup raisins
  • 1/2 cup water
  • 1 cup applesauce
  • 1 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp ground cloves
  • 1 cup sugar
  • 1 egg
  • 1/2 cup chopped walnuts (optional)

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease a 9 x 5 loaf pan, and line with two strips of waxed paper (one to fit length of pan, one to fit width).
  3. In a small saucepan, combine raisins and water. Bring to a boil, then reduce heat; cover and simmer 1 minute then remove from heat. Stir in applesauce and cool to lukewarm.
  4. Meanwhile, sift together flour, baking soda, cinnamon and cloves; set aside.
  5. Cream butter and sugar together until light and fluffy.
  6. Beat in egg and vanilla.
  7. Add dry ingredients alternately with applesauce mixture, stirring each time until just blended.
  8. Stir in nuts, if desired.
  9. Pour mixture into greased and waxed paper lined 9 x 5 loaf pan.
  10. Bake 1 hour or until toothpick inserted in center comes out clean.
  11. Cool in pan on rack 10 minutes; Remove from pan and peel off waxed paper. Cool completely on rack.
  12. Note: You can also use smaller loaf pans - just adjust baking time accordingly.
