Applesauce Muffins

Ingredients:

  • 1/2 cup butter
  • 1/2 cup sugar
  • 2 eggs
  • 3/4 cup applesauce
  • 1 3/4 cups flour
  • 1 tbsp baking soda
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 1/8 tsp cinnamon

Directions:

  1. Cream butter and sugar, beating until light and fluffy.
  2. Add eggs, one at a time, blending well.
  3. Stir in applesauce.
  4. Combine dry ingredients and stir into applesauce mixture just to moisten.
  5. Spoon batter into lightly-greased muffin tins, filling 2/3 full.
  6. Bake at 425 degrees for 15 minutes.
  7. Remove from pan immediately and dip tops in melted butter.
  8. Combine sugar and cinnamon and sprinkle over muffins.
