Spiced Pecans With Rum Glaze

Ingredients:

  • 2 cups pecans
  • 2 tbsp sugar
  • 3/4 tsp kosher salt
  • 1/2 tsp cinnamon
  • 1/8 tsp clove
  • 1/8 tsp allspice
  • 1 tbsp rum , darker the better
  • 1 tbsp butter
  • 2 tsp vanilla

Directions:

  1. Preheat oven to 350F with rack in middle.
  2. Line rimmed baking sheet with silpat or parchment.
  3. Spread pecans and toast 4 minutes. Rotate sheet and toast until fragrant about 4 more minutes.
  4. Place on wire rack or top of stove.
  5. Stir together sugar, salt and cinnamon and cloves and allspice in a medium bowl.
  6. In a small saucepan bring the glaze ingredients to a boil over medium heat, stirring constantly.
  7. Stir in pecans and cook, stirring contsantly with silpat or wooden spoon until the liquid is evaporated.
  8. Move nuts to spice bowl, toss well to coat.
  9. Return to baking sheet to cool before serving.
