Spiced Apple Bread

Ingredients:

  • 2 2/3 cups flour
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp salt
  • 2 tsps cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 2 cups sugar
  • 2 tsp vanilla
  • 4 cups coarsley chopped apples
  • 1 cup raisins

Directions:

  1. Preheat oven at 325 degrees.
  2. In a bowl combine flour, baking soda, salt and spices.
  3. In a mixing bowl, combine sugar and oil. Beat in eggs and vanilla, then stir in apples, raisins and pecans. Mixture will be thick.
  4. Add the dry ingredients and mix until well blended.
  5. Grease 2 9x5 loaf pans and line with wax paper. (If you are using nonstick pans spraying bottom with nonstick cooking spray is fine.)
  6. Bake at 50 to 60 minutes or until cake tester inserted in center comes out clean.
  7. Note: For a lower calorie bread: substitute 1/2 cup of applesauce for 1/2 cup of oil, 1 cup of splenda for baking for 1 cup of sugar.
