Southern Living Peanut Brittle

Ingredients:

  • 1/2 cup raw peanuts
  • 1 cup sugar
  • 1/4 tsp salt
  • 1 tbsp butter or 1 tbsp margarine
  • 1 tsp vanilla

Directions:

  1. Combine peanuts, sugar, corn syrup and salt.
  2. Cook over low heat, stirring gently until sugar dissolves.
  3. Cook, stirring occasionally to hard crack stage (300°F).
  4. Stir in butter, soda and vanilla.
  5. Pour onto a buttered baking sheet.
  6. When cool, break into pieces.
