Southeast Asian Shrimp Grapefruit Salad

Ingredients:

Directions:

  1. Put shrimp in saucepan with salted water to cover then bring to boil and turn off heat.
  2. Allow to sit 5 minutes then cool in refrigerator or under cold running water then peel.
  3. Combine fish sauce with 2 tablespoons water, sugar and lime juice then whisk until smooth.
  4. Arrange lettuce on 4 plates then top each portion with a few grapefruit pieces.
  5. Add some shrimp, mint and cilantro then drizzle with dressing.
  6. Sprinkle with the minced chilies and chopped peanuts.
