South African Curried Banana Salad

Ingredients:

Directions:

  1. Add olive oil to frying pan and heat on medium heat.
  2. Add onions and sweat for 8 minutes.
  3. Add tomatoes and heat until saucy.
  4. Combine vinegar, cornstarch, sugar and curry powder and bring to a boil, stirring constantly.
  5. Add jam and combine with tomato mixture.
  6. Allow to cool and reserve until ready to complete salad.
  7. Add mixture to bananas and serve over a bed of fresh spinach.
