Sour Cream Potato Salad

Ingredients:

Directions:

  1. Toss together lightly the potatoes, finely diced cucumber, onion and seasonings.
  2. Remove yolks from eggs.
  3. Chop egg whites and add to potato mixture.
  4. Press egg yolks through a sieve and combine with sour cream, salad dressing, vinegar and mustard.
  5. Fold dressing mixture into potatoes.
  6. Chill well.
