Snow Topped Sweet Potatoes

Ingredients:

Directions:

  1. Heat potatoes in syrup, drain, reserving 1/4 cup syrup.
  2. Mash potatoes with reserved syrup, add butter, (salt and pepper to taste) and pecans, cover to keep warm.
  3. Place pineapple rings on cookie sheet, broil until hot. Top each with a mound of sweet potatoes, then a marshmallow. Broil 5-6 min, or until marshmallows are golden brown.
  4. Serve immediately.
