Alaine's Tangy Stove Top Sweet Potatoes

Ingredients:

  • 3 medium sweet potatoes
  • 2 tbsp butter
  • 4 large marshmallows
  • 1 tsp ginger

Directions:

  1. Peel and cube the sweet potatoes.
  2. Boil in water until tender, drain and rinse pot.
  3. Melt butter and marshmallows in pot on low heat, 45 seconds.
  4. Add ginger and stir. Turn off heat.
  5. Fold in potatoes until completely coated.
  6. Add yogurt, fold into potatoes.
  7. The result should be a little creamy, with large chunks of potatoes. Serve at room temperature.
