Sleepy Time Low-Fat Banana Muffins

Ingredients:

  • 1/2 tsp salt
  • 1/3 cup applesauce
  • 1/4 cup honey
  • 1/2 cup milk

Directions:

  1. Preheat oven to 350°F
  2. In a large bowl, combine the flour, salt, & baking powder.
  3. In a blender, puree the bananas.
  4. Add the applesauce, honey & milk.
  5. Pour the banana mixture into the dry ingredients and stir until just moistened.
  6. Line the muffins tins with paper muffin cups.
  7. Pour in the batter.
  8. Bake for 30 minutes or until tops are lightly brown and slightly springy.
  9. Note: Make sure you use WHOLE WHEAT PASTRY FLOUR, or you'll produce golf balls, not muffins.
