Nif's Peanut Butter Banana Muffins

Ingredients:

  • 2 eggs
  • 1/2 cup honey
  • 1/3 cup oil
  • 2 tbsp water
  • 2 medium bananas, mashed
  • 1 tsp vanilla
  • 1/2 cup peanut butter
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup peanuts , pieces (optional)

Directions:

  1. Spray muffin tin with nonstick spray and preheat oven to 375°F.
  2. Combine eggs, honey, oil, water, bananas, vanilla and peanut butter in a large bowl and mix well with a hand mixer.
  3. Combine flour, baking powder, baking soda and salt in a medium bowl. Fold dry ingredients into wet ingredients and stir 20 times.
  4. Spoon batter evenly into muffin tin. Bake 20-25 minutes, until toothpick inserted comes out dry.
