Shrimp With Tomato Sauce and Feta Cheese

Ingredients:

Directions:

  1. Heat oil in large skillet or saucepan over medium heat.
  2. Add onions and garlic.
  3. Cook for 2 minutes, stirring often.
  4. Add zucchini and cook for 5 more minutes, until zucchini is softened.
  5. Add tomatoes, wine, oregano, black pepper, crushed red pepper flakes, and salt.
  6. Bring to a Boil.
  7. Reduce heat to medium.
  8. Cook, uncovered, for 10 minutes.
  9. Add shrimp and feta cheese.
  10. Increase heat to Med-high.
  11. Cook until shrimp turns pink, about 5 minutes.
  12. Stir often.
  13. Serve over hot, cooked rice.
