Shrimp Wild Rice And Spinach Salad

Ingredients:

  • 2 1/2 cups of water
  • 1 1/2 cups of wild rice
  • 1/2 lb of small fresh shrimp
  • 1 cup of firmly packed, shredded , fresh leaf spinach
  • 1/3 cup of dry white wine (optional)
  • 1/4 cup of veggie oil
  • 2 tsp of sugar
  • 1 tsp salt

Directions:

  1. Bring water to boil and add rice, reduce hear to low and cover and cook for about 30 mins until absorbed water.
  2. Transfer to large bowl, cover with plastic wrap and chill
  3. Place shrimp in saucepan and add enough salted water to cover and bring to a boil.
  4. Remove pan from heat and let stand for 1 minute and drain
  5. After shrimp has cooled, peel, devein, and add to the rice.
  6. Add mushrooms, spinach, scallions, and toss
  7. In small bowl combine the wine, oil, sugar, salt, and pepper and whisk til blended and pour over rice and shrimp. Toss well and chill until ready to serve.
  8. The wine is optional.....Italian dressing can be used in place of the wine and oil as we usually do. You can save a bit of time by using frozen shrimp that has already been deveined and peeled.
  9. Next time we make this I intend on adding some shelled and salted sunflower seeds and maybe some raisins. This is a light dish perfect for a post workout snack, light lunch to take to work if you have a fridge there, or a dinner salad.
