Ingredients:

Directions:

  1. Rinse and drain the shrimp.
  2. Heat the soy sauce, rice vinegar, and 2 tbsp of chicken brother in a pan over medium heat.
  3. Add the garlic and ginger and cook until tender. (Do not overcook as it will burn the garlic!).
  4. Add the vegetables to the pan and continue to cook, adding more broth as necessary and turning the vegetables so that they are evenly cooked throughout.
  5. When the vegetables are halfway cooked, add the shrimp and continue to cook until the vegetables are tender and the shrimp are opaque in color.
  6. Serve over rice.
