Ingredients:

Directions:

  1. Prepare stuffing mix and let cool.
  2. Remove bone and any cartilage from pork chops.
  3. Tenderize the meat with a mallet or back side of a cleaver (gently if using cleaver).
  4. Flatten the pork to about 1/4 thick.
  5. Spread stuffing on top of pork no more than 1/2 thick.
  6. Roll the pork into a log shape and tie with food grade string or use tooth picks to hold together.
  7. In a large oven proof skillet, brown the pork in olive oil over medium heat.
  8. Add all remaining ingredients and cover the skillet.
  9. Finish cooking in a preheated 375 degree oven for about 45 minutes or until pork is done.
