Ingredients:

  • 1 1/3 cups sugar
  • 1 1/3 cups water
  • 1 cup raisins
  • 1 tbsp butter
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 2 1/2 cups all-purpose flour
  • 1 tsp salt

Directions:

  1. Combine sugar, water, carrots, raisins, butter and spices in a saucepan.
  2. Bring to a boil.
  3. Reduce heat and simmer for 5 minutes.
  4. Remove from heat, cover and allow to rest for 12 hours.
  5. **Comment on original recipe: the secret of this cake is to let the boiled ingredients stand for twelve hours. Gerry has always followed this step.
  6. Preheat oven to 275 degrees F.
  7. Add baking soda, mixing to dissolve.
  8. Add the flour, salt and baking powder.
  9. Lastly, fold in the nuts.
  10. Pour batter into 2 well-greased loaf pans OR 1 tube pan.
  11. Bake for 2 hours.
  12. Remove from oven.
  13. Cool.
  14. Wrap.
