Sheep Wagon Carrot Cake

A carrot cake which Gerry999 at recipezaar says came across the country in covered wagons. A real pioneer tradition!
Ingredients:
1 1/3 cups sugar
1 1/3 cups water
1 1/3 carrots, finely grated
1 cup raisins
1 tablespoon butter
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon cloves
1 cup nuts, chopped
2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoon baking powder
Directions:
1. Combine sugar, water, carrots, raisins, butter and spices in a saucepan.
2. Bring to a boil.
3. Reduce heat and simmer for 5 minutes.
4. Remove from heat, cover and allow to rest for 12 hours.
5. **Comment on original recipe: the secret of this cake is to let the boiled ingredients stand for twelve hours. Gerry has always followed this step.
6. Preheat oven to 275 degrees F.
7. Add baking soda, mixing to dissolve.
8. Add the flour, salt and baking powder.
9. Lastly, fold in the nuts.
10. Pour batter into 2 well-greased loaf pans OR 1 tube pan.
11. Bake for 2 hours.
12. Remove from oven.
13. Cool.
14. Wrap.
