Sesame Spinach

Ingredients:

  • 2 (12 oz) packages frozen leaf spinach
  • 1/4 cup soy sauce
  • 1/4 tsp sugar
  • 1 medium onion, cut into rings
  • 2 tbsp sesame seeds

Directions:

  1. Cook spinach according to pkg. directions; do not overcook. Combine soy sauce, vinegar and sugar. Drain spinach and add onion rings; add soy sauce mixture and toss. Chill for 1 hour, tossing frequently. Serve in portions as a salad; garnish with toasted sesame seeds just before serving. Note: To toast sesame seed, gently heat a 2-3 oz. box sesame seed in small skillet. Stir frequently until each seed is toasted but not burned. Press seed using the bottom of a water tumbler to extract oil and enhance flavor.
