Savory Rice Croquettes Dated 1954

Ingredients:

  • 2 cups cooked rice
  • 2 medium eggs
  • 1/2 cup biscuit mix
  • 1/4 tsp garlic powder
  • 1/8 tsp pepper
  • 1/2 tsp salt

Directions:

  1. In medium bowl combine cooked rice and eggs.
  2. Add biscuit mix, onion powder, garlic powder, pepper and salt.
  3. Stir everything up until it is sticky and gooey.
  4. Heat vegetable oil until very hot then drop rice mixture in by spoonfuls.
  5. Fry a few at a time until they are golden brown.
  6. Remove with a slotted spoon and let them drain on paper towels.
