Savory Baked Sweet Potato Fries

Ingredients:

  • 4 medium sweet potatoes, cut in thin sticks
  • 2 tblsps olive oil
  • 1/2 tsp paprika
  • 1/2 tsp lemon pepper
  • salt to taste

Directions:

  1. Preheat oven to 400º. Peel and cut the sweet potatoes into thin sticks resembling french fries. Cover with water and boil for 4 minutes or until slightly tender.
  2. Mix the olive oil and seasonings in a medium bowl and add the potato sticks, tossing to coat.
  3. Spray a baking sheet lightly with non-stick cooking spray. Spread potato sticks evenly on the baking sheet and bake for 30 minutes, turning once or twice during baking.
