Baked Chicken and Garlic Orzo

Ingredients:

Directions:

  1. Preheat oven to 350.
  2. Spray large nonstick skillet with cooking spray.
  3. Heat over high heat until hot.
  4. Add chicken breast halves.
  5. Brown meat side down, 1 to 2 minutes or until lightly browned; set aside.
  6. Reduce heat to medium-high; add wine.
  7. Stir with a flat spatula, scraping brown bits from bottom of pan.
  8. Cook 30 seconds or until slightly reduced; set aside.
  9. Spray 9-inch square baking pan with nonstick cooking spray.
  10. Add pasta, onions, garlic, parsley, oregano, chicken broth, water and wine mixture; stir.
  11. Place chicken breasts on top.
  12. Sprinkle lightly with paprika and lemon pepper.
  13. Bake, uncovered, 1 hour and 10 minutes.
  14. Remove chicken.
  15. Add salt and olive oil to baking pan; mix well.
  16. Place chicken on top.
  17. Serve.
