Ingredients:

Directions:

  1. In large bowl, beat eggs and sugars.set aside.
  2. Squeeze sauerkraut after rinsing till dry.
  3. Finely chop and add to egg mixture - add oil and walnuts -
  4. Combine flour, baking powder, baking soda and salt and nutmeg.
  5. Stir into egg mixture.
  6. Line bottom of 2 8 round cake pans with waxed paper.
  7. Grease and flour paper.
  8. Pour batter into pans -
  9. Bake at 350* for 35-40 minutes or toothpick test.
  10. Cool in pans for 10 minutes.then remove and place on racks to cook completely.
  11. FROSTING:.
  12. Beat cream cheese and 2 tbls cream in small bowl -
  13. Add sugar, beat till fluffy -
  14. Add orange peel.cinnamon and vanilla.mix well.
  15. Add remaining cream if needed -
  16. Spread between layers and cover entire cake.
  17. Garnish with walnuts if desired -
  18. Store leftovers in the refrigerator.
