Ingredients:

Directions:

  1. Heat the oven to 375 degrees F.
  2. Crust:
  3. Combine graham cracker crumbs, sugar and butter and mix well.
  4. Press the mixture firmly into an ungreased 9-inch pie plate.
  5. Press flat onto bottom only.
  6. Bake for 8 minutes or until the edges are slightly brown.
  7. Reduce the oven temperature to 350 degrees F .
  8. Filling:
  9. Combine cream cheese, sour cream, cornstarch and sugar in the bowl of a mixer.
  10. Mix until the sugar has dissolved.
  11. Add the butter and vanilla extract and blend until smooth, being careful not to over-mix or the filling will become too fluffy and will crack when cooling.
  12. Pour the filling over the crust.
  13. Bake at 350 degrees F for 30 to 35 minutes, or until a knife
  14. Inserted 1 inch from the edge comes out clean.
  15. Cool for 1 hour.
  16. Topping:
  17. Mix the sour cream and confectioners' sugar.
  18. Spread the mixture over the top of the cooled cheesecake.
  19. Chill or freeze until ready to eat.
