Ingredients:

  • 1/2 cup oil
  • 3 eggs
  • 1 1/2 cups sugar
  • 2 1/2 cups flour
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp vanilla
  • 2 1/4 cups mashed mangoes

Directions:

  1. Mix oil,eggs, sugar and flour together until combined. Then add cinnamon, salt, vanilla, baking powder and soda, mix well. Add the mashed mangos and mix well.
  2. Put in 2 slightly grease 8x4x2 1/2 loaf pans. In a 350* oven for 1 hour and 15 min or until toothpick in center comes out clean. Cool and serve.
