Ingredients:

Directions:

  1. Cover beans with water and soak overnight.
  2. Drain and add fresh water to 3” above beans.
  3. Add onion with cloves and salt then boil 5 minutes.
  4. Skim reduce heat and simmer 30 minutes.
  5. Put salt pork in water and bring to a boil then lower heat and simmer 30 minutes.
  6. Remove pork and cut in small pieces.
  7. Cut smoked ham in julienne strips.
  8. Blend mustard with a little of the bean liquid.
  9. Place a layer of beans in the bottom of a large baking dish.
  10. Add a layer of pork, ham, onion and garlic.
  11. Repeat layers ending with beans on top.
  12. Add mustard mixture and enough bean liquid to come to the top of the baking dish.
  13. Bake at 300 for 4 hours adding more liquid if necessary.
  14. Remove from oven and pour rum over beans.
  15. Return to oven and bake another 45 minutes.
