Roasted Zucchini With Fresh Thyme

Ingredients:

  • cooking spray
  • 2 medium zucchini , halved lengthwise
  • 1 tbsp olive oil
  • salt and pepper

Directions:

  1. Preheat oven to 450 degrees.
  2. Coat a large baking sheet with cooking spray.
  3. Arrange zucchini halves, flesh side up on prepared baking sheet.
  4. Drizzle olive oil over zucchini.
  5. Season with salt and pepper.
  6. Season with garlic powder.
  7. Sprinkle fresh thyme over the top.
  8. Roast 8-10 minutes until golden brown.
