Directions:

  1. Preheat oven to 450 degrees F. Spray cookie sheet (unless it is nonstick). Slice zucchini; toss with oil. Combine Parmesan, bread crumbs, salt and pepper. Coat zucchini with Parmesan mixture. Place on baking sheet in single layer.
  2. Bake until brown and crips, about 20-30 minutes. Serve immediately.
