Ingredients:

Directions:

  1. Quarter onions, then cut each quarter in half.
  2. Toss onions, potatoes, olive oil and garlic together.
  3. Spread out on a large baking sheet and sprinkle with salt and pepper.
  4. Bake at 400 for 45 minutes until tender and lightly browned.
  5. Serve over spinach with the bacon dressing.
  6. For dressing:.
  7. Cook bacon , remove from pan reserving 1 tbs of drippings.
  8. Add the rest of the ingredients to the drippings and cook until heated.
  9. Crumble bacon and stir it in.
