Roasted Potato & Garlic Salad With Cilantro

Ingredients:

Directions:

  1. Preheat the oven to 450 degrees.
  2. In a large mixing bowl, toss the potatoes with olive oil and season well with salt and pepper.
  3. Place onto 2 baking sheets and sprinkle evenly with garlic.
  4. Roast for 20 - 30 minutes, or until tender and lightly browned.
  5. Remove from the oven and cool slightly.
  6. Sprinkle and gently toss with chili powder, cumin, cayenne, cilantro, and green onions.
  7. In a small bowl, mix lime juice, Dijon mustard, and sugar. Drizzle over potatoes and toss.
  8. Serve immediately or refrigerate until chilled.
  9. Enjoy!
