Roasted Green Tomatoes

Ingredients:

Directions:

  1. So simple, so delicious.
  2. Slice tomatoes.
  3. Spray 8 inch square baking dish (I prefer ceramic or glass for this)
  4. With cooking spray.
  5. Put one layer of tomatoes on bottom of the dish, sprinkle with salt and pepper.
  6. Top with some of the grated cheddar cheese.
  7. Repeat twice. (Don't do more layers than three)
  8. Bake covered tightly with foil at 350 degrees for 30 minutes.
  9. Remove foil.
  10. Bake another 20 minutes to brown the cheese on top slightly.
