  1. Select firm, green tomatoes just turning red. Slice in 1/2 inch slices; salt and pepper them and let stand for about 30 minutes. Dip in corn meal and fry in very little grease (adding grease as necessary to keep from burnin), until brown on both sides. Young squash may be fried in the same way.
