Roasted Garlic-basil Potatoes

Ingredients:

Directions:

  1. Toss potatoes with a small amount of olive oil, salt & pepper in a bowl.
  2. Place on a baking sheet, cut side down, and cover with foil.
  3. Bake at 450 degrees for 20 minutes.
  4. Uncover and continue to roast until done, about 20 to 30 minutes.
  5. Place mashed garlic and basil in bowl.
  6. Add hot potatoes and toss well.
  7. Season with more salt and pepper if needed.
