  1. To boiling water, add bouillon cubes and then rice. Reduce heat to simmer and cover tightly. After 10 minutes, add raisins, re-cover and cook for 10 minutes. Add fresh or frozen peas, re-cover and cook for 10 more minutes or until all the liquid is absorbed. Meanwhile, whisk together all ingredients for the dressing. When rice is done, remove from heat and add 1/2 to 3/4 cup dressing. Stir well. Add green onions and Miracle Whip. If necessary, add more dressing to moisten. May be served warm or pressed into a salad mold and chilled. Garnish with chopped chives and/or cherry tomatoes. Serves 8-10.
