Ingredients:

Directions:

  1. You will need large fry pan and a oven dish about, 6-8 cup capacity and 1 small saucepan
  2. Heat oil in a large fry pan, when hot place, chopped onion, capsicum and celery in pan, lower heat ,cook till soft,
  3. Add grated carrrot and cook, through
  4. Add casserole mince to cooked veges ,mix through
  5. Sprinkle onion salt, and salt and pepper, mix through well
  6. Add drained corn kernels, mix through well
  7. Add the cooked vege mixture to cooked rice and mix well
  8. Run a fork down sides of dish, 1 inch apart, little wells for tomatoe sauce
  9. Pour tomatoe sauce over top and spread , so it goes down into where fork punctured
  10. Place in oven dish
  11. TO MAKE TOMATOE SAUCE
  12. Place , tomatoes,, 1/2 of vinegar, sugar, apple, onion, garlic, salt and pepper , in a saucepan and bring to boil, then simmer,Taste, to see if tomatoe mixture requires any more vinegar, keep simmering, till it boils down and thickens, stir to break down tomaotoes, About 1 hour
  13. Place rice dish in 180-200 degree, PRE HEATED oven
  14. Cook for 1 hour
