Refrigerator Coffee Cake

Ingredients:

  • 1/4 cup margarine or 1/4 cup butter
  • 1/2 cup sugar
  • 1 3/4 cups flour
  • 1/2 tsp salt
  • 1/4 tsp cinnamon (original recipe calls for nutmeg)
  • 1/2 cup milk
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/2 cup chopped nuts
  • 1 tbsp flour
  • 1 tbsp melted butter or 1 tbsp margarine

Directions:

  1. Combine and mix the topping ingredients with a fork and set aside.
  2. Grease a 8x8 pan.
  3. Cream the shortening of choice, sugar and egg together until fluffy.
  4. Add dry ingredients alternately with the milk.
  5. Turn batter into prepared pan and sprinkle with spicy topping.
  6. Cover and place in refrigerator overnight.
  7. Next morning bake in a 375 degree oven for 30-35 minutes.
  8. VARIATION: UPSIDE-DOWN COFFEE CAKE.
  9. Grease a 8x8 pan.
  10. Add 1/4 cup corn syrup to the spicy topping mixture.
  11. Spread evenly in the bottom of the pan and cover with Refrigerator Coffee Cake batter.
  12. Place in fridge overnight.
  13. Bake as for Refrigerator Coffee Cake.
  14. Turn up-side down immediately.
  15. Enjoy.
