Red Lentil Rice Soup

Ingredients:

  • 1 1/3 cups red lentils
  • 1/2 cup brown rice
  • 6 cup water
  • 3 tbsp olive oil
  • 1 medium onion, diced

Directions:

  1. Heat olive oil in stock pot.
  2. Add onion and cook until it begins to brown.
  3. Add water and bring to a boil.
  4. Add rice and lentils and simmer until rice is cooked (30 min)
