Ingredients:

  • 1 cup sugar
  • 1/2 cup shortening, (she told me to uses butter)
  • 1 egg
  • 1 tsp vanilla
  • 1 tspoon cinnamon
  • 1 level tsp baking soda
  • 1 cup flour
  • 1/2 cup nuts or coco nut , or both

Directions:

  1. Cream together sugar, shortening, egg and vanilla.
  2. Sift togther cinnamon, soda and flour.
  3. Mix both ingredients togther, then add apples and coconut.
  4. Spread into 9 x 9 greased pan.
  5. Bake 35 to 40 minutes at 350 degrees.
  6. Serve this Hot or cold. Either way it is great!
  7. You can serve it warm with vanilla bean ice cream.
