Ingredients:

  • 1/2 cup brown sugar
  • 2 eggs
  • 1/4 cup molasses
  • 1/2 cup canola oil
  • 1/2 cup skim milk
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp salt
  • 3 cups raisins

Directions:

  1. Preheat oven 400°F.
  2. Mix oil, milk, eggs, sugar and molasses together.
  3. Mix in bran.
  4. Mix flour, baking soda and powder & salt.
  5. Add dry to wet ingredients and mix together.
  6. Add raisins.
  7. Line muffin tins with muffin liners or spray with Pam.
  8. Cook for approx 15 minutes, until tops spring when touched.
  9. Cool on wire racks.
