Bran Muffins With Dried Fruit

Ingredients:

Directions:

  1. Combine milk and bran flakes and allow to sit in a bowl.
  2. Combine dry ingredients, including fruit (I use peaches, apricots, cherries, cranberries, prunes or whatever combo I have in the house).
  3. Mix eggs, banana, vanilla and oil well and add to bran mixture.
  4. Add wet ingredients to dry ingredients.
  5. Stir to blend, but don't overmix.
  6. Bake at 375° for 20 minute.
  7. Makes about a dozen regular-size muffins.
  8. I usually make 6 regular muffins, and use the rest for mini-muffins (bite size).
