Ingredients:

  • 1 cup quinoa
  • 2 cups of water
  • 1 medium zucchini peeled and cut into cubes
  • 1/3 cup dried raisins
  • 1 bunch (about 1 cup) cilantro leaves chopped
  • 1 bunch (about 1/3 cup) mint leaves chopped
  • juice of 1 lemon (about 1/2 cup)
  • 1/4 cup of olive oil
  • 2 cloves of garlic
  • 1/2 tsp salk

Directions:

  1. Put the quinoa in a wire strainer and thoroughly rinse with hot water to remove any bitter flavor.
  2. In a medium saucepan, bring the water and quinoa to a boil over high heat. Reduce the heat to low, cover, and simmer until the quinoa is tender and the water is absorbed, 10 to 12 minutes. Let cool completely.
  3. In a small bowl, whisk the lemon juice, oil, garlic, salt
  4. In your salad bowl, mix the tomatoes, onions, zucchini, raisins, cranberries, sunflower seeds, walnuts, cilantro and mint with the quinoa.
  5. Pour the dressing over the quinoa mixture and toss gently to mix.
  6. Cover and refrigerate for at least 30 minutes to 1 hour before serving.
  7. This salad is even better made the day before. Great for dinner, parties, or pot luck
  8. Feel free to replace the zucchini with cucumbers sub any of the dried fruits with the ones you like and do the same with the nuts.
