Quick Sausage Stuffed Acorn Squash

Ingredients:

  • 2 medium acorn squash (could use carnival, or other equivalent)
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped onion
  • 1/3 cup sour cream

Directions:

  1. Cut squash in half and remove seeds.
  2. Place squash cut side down on microwave safe dish with 1/4 inch water and microwave on high for 10-12 minutes, or until just tender.
  3. Meanwhile, crumble sausage into large skillet and add celery and onion.
  4. Cook over medium heat until meat is no longer pink, drain.
  5. Remove from heat and stir in sour cream.
  6. Spoon sausage into squash halves.
  7. Cover and microwave on high for 1 minute or until heated through.
