Quick Pumpkin Soup

Ingredients:

  • 2 tbsp butter
  • 1 small onion, chopped finely
  • 2 (15 oz) cans of packed pumpkin
  • 1 quart water
  • 1 cup milk
  • 2 tbsp maple syrup
  • 1/2 tsp salt

Directions:

  1. Melt butter in large saucepan over medium heat.
  2. Add onion and cook, stirring often until very soft-about 8 minutes.
  3. Add pumpkin, water, milk, syrup, salt and pepper. Bring to boil.
  4. Reduce heat and simmer for 10 minutes whisking often.
  5. Now serve and enjoy!
