Ingredients:

  • 1 3/4 cups all-purpose flour
  • 2 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup shortening
  • 2/3 cup sugar
  • 1 -1 1/4 cup ripe banana pulp
  • 1/2 cup broken nutmeats (optional)

Directions:

  1. Preheat oven to 350 degrees.
  2. Sift flour, re-sift wih baking powder and salt.
  3. Blend shortening, sugar until creamy and add lemon rind.
  4. Beat in eggs and banana pulp.
  5. Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition until smooth.
  6. Fold in chopped nuts.
  7. Place the batter in a greased bread pan.
  8. Bake the bread for about 1 hour or until done.
  9. Cool before slicing.
